Our rolled pork shoulder roast's skin is already scored by our butchers.  Preheat oven to 220°C. Calculate the cooking time – allow 30 minutes per 500gpork (for 1.5kg cook for 1 ½ hours).  Rub the salt into the skin, and then rub with 1 tbsp olive oil. If the size available, differs from one ordered you'll be credited or invoiced according to the size available.
